Baby Quiches

yummy baby quiches, perfect for a lunch box, party's and breakfast
           make 12 baby quiches

           You will need : 60 g of  lean bacon chopped and uncooked
                                     200 ml free milk 
                                      1\2 medium onion, peeled and chopped very finely 
                                     5 eggs
                                    250 ml cooked or canned butter beans
                                     5 - 10 ml mustard powder (1 - 2 t )
                                     2,5 ml freshly ground black pepper (1\2 t)
                                     5 ml dried parsley or dried herbs( 1 t)
                                      30 g cheddar or mozzarella cheese( 1 matchbox before grated)
                                      2,5 ml salt ( 1\2 t)


1) Preheat the oven to 180 degrees C . Lightly coat the 12 hollows of a muffin pan(7,5-cm diameter     hollows) with oil or spray with non stick cooking spray.

2)In a frying pan, dry fry the bacon and onion for 3 minutes over moderate heat. Set aside.

3) Puree the drained butter beans with half the milk(100 ml)

4)Pour the pureed beans in to a 1-liter jug or bowl and add the rest of the milk, eggs, mustard             powder, salt, pepper and herbs. Stir to mix.

5)Add the fried bacon and onions. Mix.

6) Pour the mixture into the lightly greased muffin pan ,filling each to 4\5  full and making sure          there is a little bacon in each quiche.

7) Sprinkle the grated cheese evenly over each quiche.

8) Place carefully in the oven and bake for 30 - 35 min, or until set.

Careful the oven is very hot!

9) Let cool in the pan for 10 min before running a knife around the edge  and removing to a wire rack. 

10)  Serve with fish fingers or chicken nuggets.


This is one of my favourite  things to bake. Baby Quiches are  easy  to make and  it tastes super good!
